Queijaria Martins
Founded by a young couple in the hamlet of Portela da Nave do Barão, Queijaria Martins was established with the support of the Associação In Loco and community funding. It produces artisan goat's cheese from the milk of several hundred Sevillian-breed goats. During production, the whey passes through several stainless-steel containers at temperatures ranging from 2°C to 90°C, while thistle is used as a coagulant.
The cheeses, produced artisanally but with the appropriate hygiene and food safety standards, are exclusively fresh — no cured cheeses are produced. The cheeses of Queijaria Martins continue to delight local residents and are already being sold throughout much of the eastern Algarve.
This cheese dairy is a fine example of entrepreneurship in the Algarvian Barrocal, which led the former President of the Republic Cavaco Silva to visit its facilities and bring greater visibility to this project that has been growing and creating jobs in the region.
